Ingredients

  • 1 whole turkey about 14 lbs
  • Vegetable oil
  • Salt
  • Pepper
  • 24 Hawaiian slider buns
  • 2 c of your favorite coleslaw
  • Sauce
  • 1 1/2 c white vinegar
  • 1/4 c red pepper flakes
  • 2 tbsp brown sugar
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp paprika

Directions

Prep:

Prepare the grill to cook indirect at 350°F using apple wood for flavor. Cut the turkey spatchcock style by removing the backbone and flattening it out. Brush lightly all over with vegetable oil. Season liberally all over with salt and pepper.

Smoke:

Place the turkey on the grill skin side up and cook until the internal temperature of the turkey in the breast, thigh, and wing joint reaches 150°F, about 90 minutes. Flip the turkey and continue cooking until the skin is well browned and the turkey reaches an internal temp of 165°F, about another hour. Remove to a cutting board and let rest for 15 minutes.

Make the sauce:

Meanwhile, make the sauce by combining all the ingredients in a medium saucepan. Bring to a simmer stirring often just until blended. Remove from the heat and set aside.

Toss:

Pull all of the meat from the turkey shredding it to your desired texture and place it in a pan. When all the turkey is in the pan add half of the sauce. Mix well. Add more sauce as desired and reserve the rest for serving on the side,

Build the slider:

To make the sliders, top each bun bottom with a scoop of the turkey and a smaller scoop of the slaw. Replace the bun top and enjoy.
