Ingredients

  • 1 whole turkey (14-15lb.)
  • 1/2 c BBQ rub
  • 2 c stock
  • Green Thai Curry Paste
  • 1/2 tsp coriander seed
  • 1 tsp cumin seed
  • 1 tsp cracked black pepper
  • 3 serrano peppers
  • 2 large jalapenos
  • 4 tbsp garlic, minced
  • 2 stalks lemongrass
  • 1-inch fresh ginger
  • 5 stalks green onions
  • 2 shallots
  • 1 tsp turmeric
  • Juice of 2 limes
  • 1 tbsp olive oil
  • 2 tbsp coconut cream

Directions

Prepping the Bird

The first step in preparing this Green Thai Chili Turkey is trussing the bird tightly and coating it liberally on all sides with BBQ rub. Make sure your smoker is preheated to 350°F.

Time to Turkey Smoke

Place turkey on the smoker. Once the turkey hits 100°F internal, fill a large foil tray with stock and place the bird inside of the tray. Close the lid and continue to smoke until it hits 145°F internal temp.

Prepare the curry mix. As the turkey cooks, prepare ingredients for the green curry mix. Blend all of the ingredients until smooth.

Apply curry mix/Bring to temp. Smear the mix on all visible sides and continue to smoke until the turkey hits 165°F internal temp.

Pull, Rest and Serve

Remove from the heat and allow to rest for 20 minutes, loosely tented in foil.

Carve the turkey and enjoy!

This Green Thai Chili Turkey is amazing on sandwiches or with roasted sides. It’s great when served with crispy roast potatoes and a fresh, zesty salad. This recipe is definitely one of my new favorites and combines the rich, earthy flavors of smoked turkey, with the punchy, bright and vibrant flavors found in Thai-style cuisine.
