Ingredients

  • 4 medium turkey tenders, about 1 1/2 lbs
  • Teriyaki Marinade
  • 3/4 c soy sauce
  • 1/4 c pineapple juice
  • 1/3 c brown sugar
  • 1 tsp sesame oil
  • 3 cloves garlic, crushed
  • 1 1/2 tbsp ginger root, chopped
  • Sandwich Construction
  • 4 sandwich size pieces French bread, split
  • 4 large tomato slices
  • 1 c shredded lettuce

Directions

At least 2 hours and up to 4 hours before you plan to cook, combine all the marinade ingredients in a bowl. Mix well and set aside. Butterfly the turkey tenders to make each into a wide sandwich sized piece.  Place them in a large heavy duty zip bag. Pour the marinade in the bag. Seal the bag removing as much air as possible.

Refrigerate for 2 to 4 hours, occasionally moving the tenders around in the bag for even marinating.

Time to Grill

Prepare the grill to cook direct over medium heat. Remove the turkey tender from the bag and place them directly on the cooking grid. Discard the marinade.

Cook the turkey, flipping occasionally until they are golden brown on both sides and cooked to an internal temperature of 165°F, about 8 to 10 minutes total. Remove to a plate.

Build the Teriyaki Turkey Tailgate Sandwich

Top the French bread bottoms with a handful of shredded lettuce, then one of the turkey tenders and finally with a slice of tomato. Add the French bread tops and serve immediately.

Note from Dr. BBQ: “This is a tasty treat for any tailgate and it’s simple to do. Just marinate the turkey tenders in the morning and grill them at the game. These also make a nice alternate choice when served alongside burgers and hot dogs.”
