Thanksgiving Turkey Leftover Eggrolls

  • Leftover turkey (diced)
  • Leftover dressing or stuffing
  • Leftover veggies (if desired)
  • Leftover cranberry sauce (about 14oz)
  • 1 package Eggroll Wrappers
  • 1 1/2 Tbsp Soy sauce
  • 1 tsp Minced Ginger
  • 1 tsp Minced Garlic
  • 1/4 stick Butter
  • 2 tsp Honey

Do you love Thanksgiving dinner, but have a difficult time thinking of new ways to use all of the delicious leftovers? Give this recipe a try for a Thanksgiving twist that will leave your family begging for turkey year round!

Start by dicing up some of that tender leftover turkey into small pieces.  Add the turkey to a bowl with your leftover cornbread dressing or stuffing.  If you have any vegetables that you want to add, throw them in there too.  I added some matchstick carrots we had leftover from our salad to mine.  Mix it all together. 

Grab your package of egg roll wrappers and add 2-3 tablespoons of the mixture to the wrapper and then roll it up per the instructions on the egg roll wrapper.  

Get a pot of your favorite frying oil heated up to 375.  I used peanut oil for my egg rolls.

While the oil is heating up let’s prep our dipping sauce.  Take your leftover cranberry sauce or jelly and put it in a sauce pan.  Add a quarter of a stick of butter and a couple of teaspoons of honey.  Place this on low heat and mix until the butter is melted.  

To the cranberry sauce, add 1 1/2 Tablespoons of soy sauce, 1 teaspoon of minced garlic and 1 teaspoon of minced ginger.  Stir the ingredients together and continue cooking until the sauce is all smooth and remove from the heat.  

When the frying oil reaches 375 degrees, begin placing the egg rolls in the oil and cook them until the outside is a nice golden brown.  For me, this was about 4-5 minutes per batch.  Once the egg roll is done, remove from the oil and place it on a rack over a pan and let them drain.  You are now ready to serve dinner! 

My family and I loved this new take on Thanksgiving leftovers.  After this meal, there were no more leftover for us.  We finished them all.  Give this dish a try.  I promise it is a turkey treat that will help you empty your fridge.
