Simple Smoked Whole Turkey

Ingredients

  • 12 lb whole turkey
  • Olive oil
  • Salt and pepper
  • 1/4 of a lemon
  • 1/4 of an apple
  • Handful of fresh rosemary and thyme

Directions

Turkey Prep:

Prepare the grill or smoker to cook at 325°F with apple or cherry wood added for smoke flavor.


Rub the whole turkey with a light coating of oil. Season with salt and pepper, including inside the cavity.


Tuck the wing tips underneath.


Place the apple, lemon and herbs in the cavity.


Smoking the Turkey:

Place the turkey on the cooking grate. Cook until the whole turkey is golden brown and cooked to an internal temperature of 165°F when checked in the wing, thigh and deep in the breast.


This will take from 2 to 3 hours depending on your smoker.


Remove from the smoker and let rest for 15 minutes. Slice and serve.
