Ingredients

  • 1 1/2 lbs 93% lean ground turkey
  • 2/3 c panko bread crumbs
  • 1 small shallot, minced
  • 2 cloves of garlic, minced
  • 1 egg, beaten
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 c fresh parsley, finely chopped
  • 1 tbsp extra virgin olive oil

Directions

Prep

In a large bowl, gently mix the turkey, bread crumbs, shallot, egg, salt, pepper and parsley by hand until combined. Shape mixture into 18 1 1/2 inch turkey meatballs.

In the Skillet

Heat olive oil in a large non-stick skillet over medium-high heat. Add the meatballs, flipping occasionally to make sure all sides are golden brown. Use a meat thermometer to register an internal temperature of 165˚F.

Transfer to a paper towel-lined plate when they are done.

Serve

To serve, place on a platter alongside your dipping sauce of choice. Think: marinara, alfredo, ranch, BBQ sauce, Thai peanut, blue cheese, etc.

Grill It Up

While these Turkey Tailgate Meatballs are perfect for popping on the couch, they are bound to be a crowd favorite at any tailgate occasion. If you’re setting up outside, bring along a cast iron skillet or another grill-safe skillet to cook these up over the coals.
