Ingredients

  • Lettuce Wraps
  • 2 c diced smoked turkey
  • 3 scallions, thinly sliced on the bias with some of the green reserved for garnish
  • Black and white sesame seeds for garnish
  • 8-10 lettuce cups (Bibb or green leaf)
  • Sauce
  • 1/2 c soy sauce
  • 1/2 c ketchup
  • 1/4 c hoisin sauce
  • 2 tbsp rice wine vinegar
  • 2 tbsp sriracha
  • 1 tbsp sesame oil
  • 1 tbsp raw sugar

In a medium bowl combine the sauce ingredients and mix well.

Heat a large skillet over medium heat. Add the sauce and bring to a simmer. Add the turkey, scallions and carrots and mix. Cook, mixing occasionally until the mixture is bubbling and heated through.

Let cool just for a few minutes and then fill the lettuce cups. The number will vary based on the size of the cups and how much you choose to fill them.

Garnish with a little of the carrots, scallion tops and sesame seeds.
