Grilled Turkey Satay with Spicy Peanut Sauce

Ingredients

  • 1 1/2 lb boneless turkey breast
  • 8 long bamboo skewers, soaked in warm water for at least an hour
  • Marinade
  • 1/3 c soy sauce
  • 2 tbsp vegetable oil
  • 1 tbsp honey
  • Juice of 1/2 lime
  • 1/4 c coarsely chopped white onion
  • 2 cloves garlic, crushed
  • 1 serrano chile, coarsely chopped
  • 1 tsp lemongrass puree
  • 1/2 tsp ground turmeric
  • 1/4 tsp white pepper
  • Peanut Sauce
  • 1/2 c smooth peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp sriracha
  • 1 tbsp honey
  • 1 tbsp water
  • Juice of 1/2 lime

Directions

At least two hours before you plan to cook and up to 24, cut the turkey into 8 long strips about 1” thick. Place them in a glass bowl and set aside. In the small bowl of a food processor combine all the marinade ingredients. Puree for 30 seconds or so until smooth. Pour over the turkey and toss to coat evenly. Refrigerate until you are ready to cook.

To make the sauce, in a medium bowl combine all the sauce ingredients. Mix until smooth and set aside.

Prepare the grill to cook direct over medium-high heat. Remove the turkey from the marinade and thread each strip of turkey onto a skewer keeping it at one end. Reserve any remaining marinade to pour over the turkey as it’s grilling. Place a double-thick strip of aluminum foil on the grill to protect the skewers as they cook. Place the skewers on the grill. Pour the reserved marinade over the turkey. Cook for about 4 minutes until golden brown on the bottom. Flip the skewers and cook until golden brown on the second side and cooked to an internal temp of 165°F.

Remove to a platter and serve the Grilled Turkey Satay with the Spicy Peanut Sauce on the side for dipping.
